Missing your pasta on Phase 2 of Pure hCG then try these spiralized raw vegetables and spiralize fruit for dessert. I love the fresh look spiralizing gives to any meal and it is super easy to do. Even if you don’t have a spiralizer using your vegetable grater does the trick. Enjoy raw or lightly cook and serve with your choice of protein or other salad vegetables like tomato. Fruit like apple can be spiralized and eaten raw and looks amazing!

Spiralized Zucchini

Zuchinni is made up of 95% water and can get mushy quick so here is the best way to cook zucchini noodles.

The secret is not to peel the zucchini and not to overcook them.

Spiralize and put into a nonstick fry pan with a splash of water, heat on low and toss lightly until al dente and still crunchy. Feel free to add in chopped garlic, ginger and a sprinkling of your favourite spice. I like to try different spices, turmeric is one I love and gives the zucchini noodles a nice golden glow. During the Maintenance Phase you can add in a little olive or coconut oil and of course spiralize lots of other vegetables.

Cauliflower and Chicken Soup

Saute your chicken in a nonstick pan with chopped onion and your choice of spices until chicken is no longer pink take off the heat and let cool

In a pot steam cauliflower until soft, drain and cool

Add chicken and cauliflower into a Nutri bullet or similar with enough water and blend until smooth.

Take out and put back into a pot or put in the microwave to heat up. Garnish with lots of fresh black pepper, Himalayan salt and chopped parsley.

Lettuce wraps

Brown your choice of protein, lean beef, chicken or fish, add chopped onion, garlic and your choice of spices, (my favourite is cayenne pepper to add a little spice) with a little water and simmer on a low heat for 5 – 10 minutes. Add fresh black pepper and Himalayan salt to taste. Serve in a large lettuce leaf with a side of tomatoes or cucumber.

Apple cider cucumber

This is an easy and refreshing way to zuzu up plain old cucumber.

Mix together a little apple cider vinegar, chopped or crushed garlic, fresh parsley and stevia (optional) Chop cucumber into quarters and toss in mixture and pop into the fridge for about an hour before eating.

Spinach Pesto Chicken

Saute chicken until cooked. In a bowl chop some fresh spinach, basil and crushed garlic mixing well to create a tasty pesto. Spoon ontop of the chicken and serve with a salad or fresh vegetables.

Spicy Mediterranean baked fish

Eating more fish is a big step towards a healthier life and the Mediterranean way is super easy and quick to do.

Lay your choice of fresh fish fillet on a piece of tinfoil or baking paper. In a bowl mix together 2 cloves of diced garlic, ½ red onion chopped finely, 1 cup of baby spinach leaves torn or chopped, 1 large tomato diced, 2 tablespoons of chopped fresh basil, fresh black pepper, Himalayan salt and the juice of 1 lemon. Spread the mixture on top of the fish and wrap the fish in the foil to seal. Bake in a hot oven until cooked.

Mexican Prawns

Fresh prawns or frozen are fine for this recipe. In fact I find having a bag of free-flow frozen prawns in the freezer is a life saver.

Take out enough prawns for your protein allowance and run under warm water to thaw. In a bowl mix together some crushed garlic or 2 cloves chopped finely, 2 spring onions finely chopped, 1 bunch of fresh coriander chopped,1 teaspoon of cumin spice and a pinch of turmeric, add the juice of 1 lime and mix again. Pour over prawns and mix well place into the fridge for an hour. Eat as is or if you wish to have them as a hot dish put everything into a nonstick frypan and cook on a low heat tossing until warm enough to eat. Enjoy.

Lean beef kebabs

Your choice of lean steak cut into large cubes. In a large bowl mix together 1 tablespoon of apple cider vinegar, 2 tablespoons of Dijon mustard, a pinch of thyme and the juice of 1 fresh lemon. Place the meat into the bowl and put in the fridge for 2 hours to marinade. Discard the marinade and put the meat onto skewers which have been soaked in water to stop them from burning and grill until tender. Serve with salad or fresh vegetables.

Baked Paprika Cauliflower Mash

Steam a large cauliflower until tender. Let cool and put into a Nutri Bullet or similar with fresh black pepper and Himalayan salt to taste. Blend until smooth (in Phase 3 you can add a little greek yoghurt) Pour into an oven proof dish and sprinkle liberally with paprika. Bake in a hot oven until the top is slightly brown. Enjoy and save the rest for another meal!

Tumeric chicken

Cook 1 chopped onion in a nonstick frypan with a little water until soft, add chopped chicken or chicken tenders, add in 1 tablespoon of turmeric and stir gently together. Place the lid on and simmer on low until the chicken is cooked through and tender. Take out and serve onto a plate and season with sea salt and freshly ground black pepper. This dish can also be cooked using sweet Hungarian paprika.
